Ingredients for two sandwiches
- 2 Pinsa 205 g
- 2 eggs
- 2 avocados
- 4 slices of smoked salmon
- Rocket
- 1 lemon
- 4 to 6 marinated artichoke hearts
- Olive oil
- Salt and pepper
- Coriander
Preparation steps
Method
- Put the Pinsa in the oven to reheat and slightly toast it.
- Hard boil the eggs.
- Make an avocado purée with a little red onion, olive oil, lemon juice and zest.
- Add coriander, then adjust the seasoning.
- Cut the artichokes into small pieces and slice the boiled eggs
Making the Sandwich
- Cut the Pinsa into three pieces, then brush lightly with olive oil.
- Spread the avocado purée on the first slice, then add the egg and the smoked salmon.
- Add a second slice of Pinsa on top.
- Repeat the step, then add the rocket and artichokes.
- Close with the last slice of Pinsa.
